Pizza with Turnip Greens and Sausage

Ingredients:

  • 1 pizza base (you can use a ready-made base or prepare it fresh)
  • 1 jar of Cime di Rape (80% turnips, EVO oil, vinegar, garlic, chilli pepper, salt)
  • 200g of Italian sausage
  • 200g mozzarella, cut into slices or grated
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • Salt and Pepper To Taste
  • Chilli flakes (optional, for an extra touch of spiciness)
  • Grated pecorino (optional, for garnish)

Method:

Sausage preparation:

  • Remove the sausage from the casing and crumble it.
  • Heat 1 tablespoon extra virgin olive oil in a skillet over medium heat.
  • Add the crumbled sausage and cook until browned and cooked through, breaking up any larger pieces with a spoon. Remove the sausage from the pan and set aside.

Preparation of Turnip Greens:

  • In the same pan, add the other tablespoon of extra virgin olive oil.
  • Add the minced garlic and fry until golden.
  • Add the turnip greens from the jar, including the preserving liquids, and cook for 5-7 minutes until hot and the flavors have blended. Season with salt and pepper.

Preparation of Pizza:

  • Preheat the oven to 220°C (430°F).
  • Spread the pizza base on a lightly greased baking tray or pizza stone.
  • Distribute the prepared turnip tops evenly on the pizza base.
  • Spread the cooked sausage over the turnip greens.
  • Add the mozzarella slices on top of the sausage and turnip tops.

Cooking Pizza:

  • Bake the pizza in the preheated oven for 12 to 15 minutes, or until the crust is golden brown and the mozzarella is melted and lightly browned.
  • If desired, add a sprinkling of grated pecorino and chili flakes just before serving.

Storage method:The product can be stored at room temperature until opened. Once opened, store in the refrigerator. For better preservation, we recommend adding oil to cover the product and consuming it within 30 days.
