How to use:
Perfect for breakfast and filling cakes and desserts, also ideal as a tasty topping. Add a spoonful to ice cream, yogurt or panna cotta for a surprising dessert.
Biscuits Filled with Elderberry Jam
Ingredients:
- 250g of 00 flour
- 125g cold butter, cut into cubes
- 100g of sugar
- 1 whole egg
- 1 teaspoon baking powder
- 1 pinch of salt
- Elderberry jam (amount to taste)
- Powdered sugar (for garnish, optional)
Method:
Preparation of the dough:
- In a large bowl, mix the flour with the sugar, baking powder and salt.
- Add the cold cubed butter and work the dough with your hands or with a mixer until you obtain a crumb-like consistency.
- Add the egg and quickly knead the dough until you obtain a smooth and homogeneous ball.
- Wrap the dough in cling film and leave to rest in the refrigerator for at least 30 minutes.
Preparation of biscuits:
- Preheat the oven to 180°C (350°F).
- Roll out the dough on a lightly floured surface to a thickness of about 3-4 mm.
- Cut the dough into discs about 5cm in diameter using a cookie cutter or glass.
Assembly:
- Place a teaspoon of elderberry jam in the center of half the dough discs.
- Cover with the remaining discs and seal the edges by pressing lightly with a fork.
Cooking:
- Place the biscuits on a baking tray lined with baking paper.
- Bake in the preheated oven for 12 to 15 minutes, or until the edges of the cookies are lightly golden.
Cooling and seal:
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- If desired, dust with icing sugar before serving.
